Roast Whitefish with Shingled Potatoes

We are just back from whitefish camp at Graber in Lake. Good time was had by all. And we were gifted with a beautiful white fish. I decided there was not enough room in the freezer and it needed to be cooked immediately.

Here he is. All scaled and gutted and gills cut out. 


I pre cook the potatoes in a 450 oven for a little while before I put the fish on. Fresh rosemary, pepper, truffle salt if you have it. A handful of small sweet tomatoes and a glug of olive oil. 


The potatoes are so delicious I make an extra pan of them! They taste different from the potatoes with the fish, both are delicious. 
And the fish is perfectly cooked after 15 minutes at 450.  And a short rest under foil. 

Delicious!
