Secret Sauces: mayo

A few years ago my Mom stayed with us and discovered when she was making a sandwich that we were out of mayonnaise; so, she made some. Chris was making a sandwich a few days later and was amazed at the difference in taste of the home made mayonnaise to the store bought version. Some folks may find mayo hard to manage, but with Mom's no fail recipe and a blender you should have no trouble. I believe the recipe originally came with her Oster blender. This recipe makes just over a cup of mayo.
1 egg
3/4 tsp salt
1/2 tsp dry mustard powder
1/4 tsp paprika
1 tbsp white vinegar
1 tbsp lemon juice
1 cup extra virgin olive oil
Method: Put egg, seasonings, vinegar, lemon juice and 1/4cup of oil in blender. Blend for a few seconds. Remove feeder cap (the center part of the lid of the blender) and pour remaining oil in to the blender in a slow, steady stream.
Tips: use fresh eggs and lemon juice. Half way through adding the oil you'll notice the texture change along with a change in pitch of the blender's engine. You can substitute chili powder for the paprika and make chili mayo.
