France Food: Roast Chicken

Roast Chicken, Lamb, Pork, Duck, Sausage, Squab, etc at the Monday Montrejeau Market.
The French roast chicken is an icon - which makes sense with all these chickens strutting about. We've sampled quite a few during our month and they are quite delicious. Each morning market seems to have at least one roastisiere, and some, like the Monday market in Montrejeau has 4. Some weeks we've had 2 roast chickens because we just can't resist the smell and appearance of a golden brown chicken on a spit.
